Weight Watchers Beef Stroganoff recipe

Ingredients Needed

  1. Beef Broth or Bouillon (Canned) (1.0 cup)
  2. All-purpose flour (2.0 tbsp)
  3. Mustard (1.0 tsp)
  4. Beef Tenderloin (Lean Only, Trimmed to 1/4'' Fat, Prime Grade) (1.0 oz)
  5. Salt (1.0 dash)
  6. Black Pepper (1.0 dash)
  7. Olive Oil (1.0 tsp)
  8. Onion (0.5 cup)
  9. Mushrooms - Cooked (1.0 cup)
  10. Water (1.0 cup (8 fl oz))
  11. Light Sour Cream (1.0 tbsp)
  12. Parsley (1.0 tbsp)
  13. Egg noodles (4.0 cups)


A delicious and nutritious heavy meal for weight watchers.

  • Whisk broth, flour, and mustard in a large nonstick skillet and stir until smooth and blended. Cook over medium high heat until the mixture comes to a boil for 2 minutes.
  • Pour into a small bowl and cover to keep warm then wipe the skillet clean.
  • Dry the beef with paper towel then sprinkle with salt and pepper. Heat oil over medium heat then add half of the beef and cook until browned until 2 minutes.
  • Transfer the beef to a plate with a slotted spoon and keep warm. Repeat with the remaining oil and the half of the beef.
  • Add onion on the skillet and stir until translucent for 3 to 5 minutes. Put the mushrooms, water, and pepper and cook for 3-4 minutes then add accumulated juices to the mixture .
  • Return the beef with the onions and mushrooms then stir for 1 minute. Transfer the meat mixture to a platter.
  • Stir the sour cream then pour the mixture over the beef then spatter with parsley.
  • Serve with egg noodles.
