  4. Baking Powder (Low Sodium) (2.0 tsp)
  5. Salt (1.0 dash)
  6. Stevia (1.0 packet)
  7. Sugar (4.0 tsp)
  8. Skim Milk (1.0 cup)
  9. Greek Yogurt (0.5 cup)
  10. 2% Lowfat Cottage Cheese (0.5 cup)
  11. grated lemon rind (0.5 tsp)
  12. 100% Pure Vanilla Extract (0.25 tsp)
  13. Eggs, beaten (2.0 large)
  14. Sweetener (1.0 packet)
  15. Blueberries (1.0 cup)

Instructions

These muffins are not just yummy but also healthy. Perfect for breakfast and your all time favorite drinks.

  • Add all the dry ingredients in a large bowl. Create a hole in the center.
  • Combine all wet ingredients in a blender, mix until smooth.
  • Mix the wet and dry ingredients together and gently stir.
  • Fold in blueberries. Scoop into muffin sprayed with cooking spray.
  • Top muffin with Truvia.
  • Bake at 375 degree for 10-15 minutes or until light golden.
  • Serve and enjoy!
