  1. Chicken Breast (boneless skinless) (6.0 oz)
  2. Turkey Ham Thigh Meat (Cured) (1.0 oz)
  3. Cheese (Mozzarella) (0.5 oz)
  4. Dijon Mustard (2.0 tbsp)
  5. Honey (1.0 tbsp)
  6. Low Fat Mayonnaise (1.0 tbsp)

Instructions

Here’s a handy French-inspired poultry dish that you can prepare ahead, freeze, and simply defrost and cook when unexpected visitors come knocking.

  • Prepare the oven and preheat over 400 degrees.
  • Arrange pan with foil for easy cleanup.
  • Put a plastic wrap and place your chicken in the center then fold in another wrap.
  • Remove the top plastic wrap and put a slice of ham on each end of breast, top with cheese.
  • Roll the chicken around it with a toothpick then placed in the foil-lined pan.
  • Combine mustard, honey, and low-fat mayonnaise in a bowl.
  • Spread a tablespoon of honey mustard sauce over the chicken, and refrigerate excess sauce.
  • Put to oven for 25 minutes or until chicken juices run clear. Serve with honey-mustard sauce for dipping.
  • Tips: When storing uncooked chicken temperature must be at 5°C or lower at any expense. When conveying cooked and raw chicken it is encouraged products are preserved in an isolated cooler or ice chest. When storing cooked chicken, it is encouraged to freeze them within 1-2 hours of serving. It is encouraged that raw or cooked chicken that is stored in the fridge is eaten within two days.
  • Tips: It is recommended that when cooking chicken, cook it well-done. It is said that when chicken is cooked in the right way, all juices from the meat are clear with no tinged of pink. It is advisable not to stuff chicken until just before cooking. Before cooking ensure that chicken is defrosted first. Clean work area, utensils and hands with hot soapy water before and after handling uncooked chicken. Never put cooked chicken in a container that has stored/come into contact with raw chicken, unless the container has been cleaned thoroughly.
  • Trivia: Fat in chicken is greatly cut down by taking out the skin. Skinless breast fillet with fat removed can be lower than 1% fat content.
