Ingredients Needed

  1. Egg Omelet or Scrambled Egg (1.0 large)
  2. Fat Free Mayonnaise (1.0 tbsp)
  3. Roasted Red Pepper Hummus (2.0 tbsp)
  4. Dijon Mustard (1.0 tsp)
  5. Pepper or Hot Sauce (1.0 tsp)
  6. Chives (1.0 tbsp of chopped)

Instructions

Spice up your usual hard boiled eggs with this tasteful yolk filling! So easy to prepare, so mouthwatering to taste!

  • Spread eggs in a single layer in a medium saucepan. Pour cool water on eggs to cover by 1 inch then set pan over high heat and bring to a boil.
  • Reduce heat and let it simmer for 12 minutes then remove eggs with a slotted spoon and plunge into ice water.
  • Remove shells then slice lengthwise and remove yolks. Put the yolks to a bowl and add mayonnaise, peppers, mustard and hot sauce.
  • Scoop yolk mixture into egg whites, mounding slightly. Sprinkle with chives.
  • Serve and Share!
