17 Day Diet Eggplant Lasagna recipe

Ingredients Needed

  1. Eggplant (1.0 Large)
  2. Fat-free Ground Turkey Breast (20.0 oz)
  3. Bell Pepper (1.0 cup)
  4. Onion (diced) (2.0 tbsp)
  5. Spinach - Raw (1.0 cup)
  6. Canned Tomatoes (no salt added) (100.0 g)
  7. Minced Garlic (1.0 tsp)
  8. Italian Seasoning (No Salt No MSG) (0.25 tsp)
  9. Black Pepper (1.0 dash)
  10. Fat Free Cottage Cheese (0.5 cup)
  11. Egg (1.0)
  12. Dry Grated Parmesan Cheese (1.0 tbsp)


Here’s a healthy twist to your usual all meat lasagna. Both kids and adults will love it because of it’s delicious and flavorful taste added by eggplant.

  • Preheat oven to 400 degrees. Spray a baking sheet with non-sticking cooking spray.
  • Rinse and slice the eggplant into medium-thick slices. Bake for 5-7 minutes then cool.
  • Cook ground turkey for 4-5 minutes then add onion, peppers, tomatoes, minced garlic, garlic powder, and Italian seasoning. Simmer for 5 more minutes.
  • Mix cottage cheese, eggs, and pepper in a bowl. Mist a 9×13 casserole dish with cooking spray.
  • Arrange ½ turkey mixture on bottom of dish, followed by a layer of eggplant , spinach, and top with half cottage cheese mixture.
  • Bake at 325 degrees for 40 minutes and let it sit before serving.
  • Tips: When choosing the right eggplant, choose the one without brown spots on the skin or stem, without mold, without bruises, resilient, shiny, smooth, and dense for the size.

    Store eggplants properly for this will determine the longevity of the fruit. Egg plants spoil fast so it is recommended to store it unwrapped in a crisper section of the refrigerator.

    Place the sliced eggplant into a heavily salted water to remove the excessive bitterness in eggplant. Rinse it with cold water and pat dry.
