Weight Watchers Eggplant Parmigiana recipe

Ingredients Needed

  1. Olive Oil Cooking Spray (0.333333333333333 second spray)
  2. Seasoned Bread Crumbs (0.333333333333333 cup)
  3. Dry Grated Parmesan Cheese (1.0 tbsp)
  4. Italian Seasoned Premium Croutons (1.0 package)
  5. Garlic Powder (1.0 tsp)
  6. Eggplant - Raw (1.0 cup of cubed)
  7. Egg White (1.0 large)
  8. Tomato Sauce (1.0 oz)
  9. Mozzarella Cheese (1.0 cheese curd)


Both kids and adults will love this because of it’s delicious and flavorful taste, plus done with just a snap!

  • Preheat oven to 350F. Spray a baking dish with cooking spray and set aside.
  • Mix breadcrumbs, parmesan cheese, Italian seasoning, and garlic powder in a medium size bowl then set aside.
  • Remove eggplant skin and trim off ends then slice into half inch thick.
  • Plunge eggplant into egg whites and then coat into bread crumb mixture.
  • Bake eggplant about 20-25 minutes on a nonstick cookie sheet until lightly browned.
  • Arrange layers of eggplant on bottom of prepared baking dish then add tomato sauce and mozzarella cheese.
  • Repeat with 2 more layers and bake until cheese is melted and sauce is bubbling.
  • Slice into 4 pieces. Share and Enjoy!
