Ingredients Needed

  1. Ground Chicken (32.0 oz)
  2. Brooks Chili beans, mild in chili sauce (31.0 oz)
  3. Diced Tomatoes (3.5 cup)
  4. V8 100% Vegetable Juice (48.0 oz)
  5. Cayenne Pepper Spice (1.5 tsp)
  6. Chili Powder (2.0 tbsp)
  7. Ground Cumin (1.0 tsp)
  8. Chipotle Peppers in Adobo Sauce (3.0 peppers with sauce)
  9. Bell Peppers - Raw (0.5 medium (approx 2-3/4'' long, 2-1/2'' dia))
  10. Onions - Raw (1.0 cup of chopped)

Instructions

This recipe is a lighter alternative to ground beef chili that tastes just as good and filling packed with nutrients and protein!

  • Fry onion, bell pepper until tender then add chicken and season with salt to taste while cooking.
  • When meat is browned, stir in tomatoes, juice and beans.
  • Bring to boil then reduce heat and simmer for about 30 minutes or until chili reaches desired thickness.
  • Ladle into serving bowls and let it cool enough to eat comfortably. Yum!
