Ingredients Needed

  1. Canola Oil (4.0 tsp)
  2. Onions (2.0 cup chopped)
  3. Extra-Lean Ground Beef (32.0 oz)
  4. Crushed Tomatoes (14-15 oz)
  5. Green Chiles (16.0 oz, 1/2 cup diced)
  6. Low Fat Tortilla (16.0 tortilla wraps)
  7. Enchilada Sauce (Hot) (2.0 cup)
  8. Jack Cheese (2.0 cup shredded)
  9. Pinto Beans (4.0 cup)

  • You can start by preparing your oven. Heat up the oven to 350 degrees Fahrenheit.

    Then get a baking dish. It is recommended to use an 8-inch square baking dish for this recipe. Use a nonstick cooking spray and use it to coat the baking dish. Set aside.
  • Put cooking oil on a large nonstick pan on medium heat. When the oil is heated, get the chopped onions and sauté until it becomes transparent.

    When the onions are cooked or translucent, you can now add the beef on the pan. Cook your beef until its color changes from pink to brown.
  • Next thing to do is to add 2 teaspoon of cumin, 1 cup of pinto beans, crushed tomatoes, and diced green chiles. Mix the mentioned ingredients into the beef and cook for at least 10 minutes or until you have a condensed sauce.

    Remove the pan from heat after 10 minutes. Transfer your cooked beef mixture in a plate or bowl. Then get the tortilla wraps.
  • In each tortilla put a little enchilada sauce and then add 1 tablespoon of beef mixture on it. Do this until all four tortillas are filled.

    After filling the four tortillas with beef mixture, roll up each one of them and put them in the baking dish seam down. The four will perfectly fit into the baking dish.
  • Get the enchilada sauce leftover and put over the rolled tortillas. Then get your shredded cheese and sprinkle on your tortilla rolls.

    Put the baking dish on the oven and bake for 20 minutes or until the cheese has melted and the sauce is bubbly.
  • Pour remaining enchilada sauce over the tortilla rolls. Top with shredded cheese. Bake for 20 minutes until sauce is bubbly and cheese has melted.
  • After 20 minutes, turn off the oven and remove the baking dish from it. Transfer your baked beef enchiladas to a plate large enough to put all your four tortillas covered with melted cheese and enchilada sauce. Serve and enjoy!
  • TIP: Using frozen ground beef and putting it directly to the pain is not most likely recommended. Freezing makes the natural beef juice to ice crystals. If you will cook it while it’s frozen, then you will lose the juicy flavor with the fat. It’s best if you will slowly thaw the ground beef in the refrigerator so the ice crystals will melt and the juice will redistribute back into the tissue.
  • TIP: When buying ground beef in a grocery, choose the one that feels cold and does not show any signs of leakage. It’s better if it should be the last one to be added into your cart and it should be separated from other foods. Then when you check out, the clerk should pack raw fish, meat, and poultry in separate bags.
