This is another tasty and easy to make recipe that you can serve with salad or low carb veggies!

  • To start, preheat the oven to 375 degrees Fahrenheit.

    Get your chopping board and work on chopping the 8 scallions (spring onions) and mincing 2 garlic cloves. Put them in a small plate and set aside.
  • Next, get a frying pan, add 1 tablespoon of extra virgin oil on it, and heat in medium flame. Add the chopped spring onions and minced garlic into the pan and sauté until they become soft.
  • After sautéing transfer the softened spring onions and garlic in a large bowl. Add the ground beef, ½ teaspoon of sage, ½ cup of grated cheese, 2 eggs (beaten), ½ teaspoon of sea salt, and ¼ teaspoon of ground black pepper. Mix well the mentioned ingredients in the large bowl. Refrigerate your meatball mixture. (It depends on you how would you want to freeze the mixture so it will be easy for you to form them in ball-shaped meat).

    TIP: You can prepare the meatball mixture hours or a day before cooking and keep it on your refrigerator.
  • When your meatball mixture has been removed from the refrigerator, leave it aside for a while to thaw. Then when it’s ready, using your hands, form your meatballs using your mixture. The size of each meat ball should be at least one and a half inch. Put your shaped meatballs in a plate and set aside.
  • Get a baking dish and put the meatballs on it. Place the baking dish on the oven and bake for 25 minutes. You may also use meat thermometer to check the right temperature to tell if your meatballs are completely baked.
  • After 25 minutes, when your meatballs are well-cooked, remove the baking dish from the oven and transfer your meatballs in a plate. Get 1 bunch of cilantro and cut into small pieces, and then drizzle the chopped cilantro on top of your meatballs.

    Serve your meatballs hot. You can pair it with your salad or low carb vegetables.

    1) Use fresh herbs and spices. It is better to use fresh ingredients in your meatballs to make them as healthy as possible. Using fresh ingredients adds more flavor and gives you more nutrients than dried variety.
  • 2) Use Low-Sodium, Low-Fat Cheese. Parmesan is one type of Low-Fat cheese that can add flavors on your meatballs. You don't have to worry about gaining too much fat to your diet because it won't. Before buying a cheese, always check on the sodium and fat content.
  • 3) It's better to bake than to fry. If you will bake your meatballs on a cookie sheet before adding them to your sauce, you will have tasty meatballs that do not have extra fat content which can ruin your diet.
