Missing mashed potatoes? Here’s a low carb substitute that is perfect for the Medifast plan. It’s not as good as your regular mashed potatoes but it will definitely satisfy your cravings for it.

  • Prepare all the ingredients before proceeding with the rest of the instructions. Measure the ingredients as precise as you can.
  • If you’re starting with raw cauliflowers, chop the cauliflower into bite-size (about 1 inch) pieces and wash them under running water. Steam or blanch them in hot water until they are soft but not mushy. Set these aside.
  • For this recipe you’ll need a hand blender or a food processor.
  • You only need 1/16 teaspoon of the salt and 1/8 teaspoon of the black pepper.
  • While the recipe uses Light Laughing Cow Cheese Wedges, you may substitute this with your preferred low fat cheese. Just make sure you add an amount that’s only equivalent to 1 Healthy Fat portion.
  • Pour all the ingredients into a bowl and blast them with the hand blender until they are completely mashed. If you do not have a hand blender, you can do this with a food processor.
  • If you don’t have a food processor, you can simply chop all the ingredients finely and mash them with a potato masher or a fork.
  • The 1 ½ cup of cooked cauliflowers are equivalent to 3 Green portions and the cheese wedges are equal to 1 Healthy Fat. The salt and black pepper are each equivalent to ¼ condiments.
  • While these may not taste as good as your regular mashed potato, they definitely are the perfect substitute.
  • I actually prefer these over mashed potatoes because they are lighter in texture. I sometimes find regular mashed potatoes too thick and heavy making them harder to eat. Best of all, this dish is low in carbohydrates.
  • This is best served as a side dish with your favorite Lean meat portion. Enjoy!
