Ingredients Needed

  1. Chocolate Pudding (2.0 packet)
  2. Scrambled Eggs (Medifast) (2.0 pkg (package))
  3. Iodized Salt (0.5 tsp)
  4. Baking Powder (1.0 tsp)
  5. Honey (2.0 tbsp)
  6. Artificial Sweetener (4.0 - 4 pkg (package))
  7. Vanilla Extract (2.0 tbsp)
  8. Cold Water (1.0 cup)

  • Start by preparing your oven. Preheat your oven at 350 degrees Fahrenheit.
  • You will need to use a large bowl with a wire whisk for this step. Prepare your bowl and put 1 package of Medifast chocolate pudding, 1 package of Medifast scrambled eggs, 1/4 teaspoon of salt, 1/2 teaspoon baking powder, and 4 packages of artificial sweetener. Combine all the ingredients until fully mixed.
  • Tip: If you don’t have Medifast chocolate pudding and Medifast scrambled eggs, you can substitute them to any chocolate pudding and scrambled eggs.
  • Then add 2 teaspoons of honey, 1 tablespoon of vanilla extract, and ½ cup of cold water. Whisk all the ingredients until the mixture turns into a wet and soupy.
  • Spray your 8 to 10 muffin tins using a nonstick spray. When done, fill each muffin tin with the chocolate mixture.
  • Tip: Make sure to spray the entire muffin tin and not just the holes. When your muffin tins are not properly greased, you’re going to have a hard time removing your muffins.
  • When all of the muffin tins are fully filled, transfer them into the oven and bake for 18 to 20 minutes. The muffins will inflate like regular muffins while they’re inside the oven, but will shrink once they are removed from the oven and cooled down.
  • After 18 to 20 minutes, when your muffins are completely baked, take them out from the oven and let them cool for at least 5 minutes.
  • When your muffins are ready, put them in a plate and serve. You can serve it along with low fat milk for those who are on a diet.
