Medifast Peach Oatmeal Muffins recipe

Ingredients Needed

  1. Hearty Peach Oatmeal (1.0 packet)
  2. Baking Powder (Low Sodium) (1.0 tsp)
  3. Vanilla Extract (0.25 tsp)
  4. Granulated Splenda (0.5 tsp)
  5. Cinnamon (0.5 tsp)
  6. Water (0.33 cup (8 fl oz))


This is an absolute hit. Everyone who has tried this has said that it’s yummy. Turn your Medifast oatmeal packets into these delicious muffins. It’s quick and easy.

  • Measure the ingredients and prepare them ahead of time before starting with the rest of the procedure.
  • This recipe uses 1 packet of Medifast Hearty Peach Oatmeal. You may substitute this with other Medifast oatmeal packets like Apple Cinnamon, Blueberry, and Maple. I’ve tried them all and they all turned out great.
  • For this recipe, prepare mini muffin trays. Coat the tray with PAM cooking spray to avoid the muffins from sticking into the pan.
  • Preheat the oven to 350 degrees. Perform this ahead of time so your oven will have enough time to reach the desired temperature.
  • Preheating your oven is important because your muffins won’t rise if the temperature of the oven is too low at the start. This also ensures even cooking of our muffins.
  • Prepare a mixing bowl and pour the dry ingredients into it. Start with the Medifast oatmeal packet, followed by the baking powder, the Splenda, and the cinnamon.
  • Stir and mix the dry ingredients with a fork to incorporate the ingredients.
  • In a separate bowl, combine the water and vanilla extract. Slowly pour this mixture (water mixture) into the center of the dry ingredients.
  • Stir continuously while doing so to incorporate the dry with the wet ingredients. Stop mixing once all the dry ingredients have moistened already. This shouldn’t take very long.
  • Transfer equal amounts of the muffin batter into each hole of the mini muffin tray. If you don’t have a mini muffin tray, you may use a regular muffin tray or any baking dish for that matter.
  • It’s important to put equal amounts of the batter in each hole so our muffins will bake evenly and at the same time.
  • Bake the muffins in the preheated oven for 20 to 25 minutes. You’ll know the muffins are done when a cake tester inserted in the middle turns out clean.
  • Baking time will greatly depend on the size of your oven and the size of your baking tray. Don’t leave your muffins the first time you bake them. Keep an eye on them and take note of the time it takes to bake them so the next time you bake another batch you can leave them already.
  • Once the muffins are done, take them out of the oven and let them cool for 5 minutes. Turn over the pan to release the muffins from the tray.
  • If you need more flavor, spray lightly with I Can’t Believe It’s Not Butter spray before serving.
