Medifast Scalllops With Spinach recipe

Ingredients Needed

  1. Time Savor Gourmet Lemon Oil (2.0 tbsp)
  2. Vegetable Broth (1.0 cup)
  3. Time Savor Gourmet Balsamic Condimenti (4.0 tbsp)
  4. Time Savor Gourmet Roasted Garlic Oil (2.0 to 2 tbsp)
  5. Baby Spinach (2.0 piece, 9 oz bag)
  6. Dry Sea Scallops (Large) (20.0 pieces)
  7. Baby Spinach (2.0 piece, 9 oz bag)

  • To prepare the garlic wilted spinach, do the following:

    Use an 8 quart pot and place it over high flame. Add 1 tablespoon of Time Savor Gourmet Roasted Garlic Oil and heat it until sizzling.

    Then, add your rinsed spinach and mix to coat with the oil. When your spinach is thoroughly coated with oil, put down the heat (turn off the stove) and cover the pot with a lid. Leave it aside for 3 minutes.
  • After 3 minutes remove the lid and toss again the spinach. The color should be bright green and your spinach should be just wilted.

    Transfer your spinach to a plate. Season it with pepper and salt. Set it aside.
  • Now prepare to cook your scallops, start by heating a large frying pan over a high flame and add oil on it. Heat the oil until sizzling.

    Next, add the scallops on the pan. Do not put them all at once. Put one scallop at a time, flat side down.
  • On high heat, cook the scallops for 3 to 4 minutes or until their color become brown and until they are caramelized.

    Tip: To determine if your scallops are ready to flip over check if they release. If they stick, then that means that they are not yet ready for flipping.
  • When your scallops don’t stick anymore, you can then start flipping each one of them. Flip over each of the scallop and cook for one minute on the other side.
  • When all of the scallops are cooked evenly on both sides, remove them from the frying pan. Place them in a bowl or flat plate and set aside.

    Then, put back the pan and heat on high flame. Put the ½ cup of vegetable broth into the pan. Gently scrape all of the brown bits off the bottom of the frying pan. Boil the vegetable broth until it’s a little reduced.
  • Put 2 tablespoon of Time Savor Gourmet Balsamic Condimenti into the vegetable broth.

    Get the plate where you put the Garlic Wilted Spinach on it. Get your cooked scallops and put them over the spinach. Pour the sauce on top of the scallops. Serve and enjoy!
