Medifast Vegetable Quiche recipe

Ingredients Needed

  1. Egg Beaters (2.0 cup)
  2. Part Skim Mozzarella Cheese (1.0 cup)
  3. Orange Tomatoes (2.0 cup chopped)
  4. Zucchini (1.0 cup chopped)
  5. Light Creamy Swiss Cheese (Laughing Cow) (4.0 wedge)
  6. Iodized Salt (0.5 tsp)
  7. Black Pepper (2.0 tsp)
  8. Onion Powder (0.5 tsp)

  • Start by preparing your oven. Preheat it to 375 degrees.
  • Next, get a baking dish as you will need this for this step. Grease a baking dish using Pam cooking spray.
  • In a mixing bowl, combine the following ingredients - 1 cup egg beaters, 1/2 cup low moisture part skim 2 % mozzarella cheese, 1/2 cup tomato, chopped, 1/2 cup chopped broccoli, 1/2 cup chopped zucchini, 2 Light Swiss Laughing Cow Cheese Wedge, 1/4 teaspoon salt, 1/4 teaspoon pepper (1/2 condiment), and 1/4 teaspoon onion powder. Mix well.
  • When done, pour the mixture into prepared pan. Then put the baking dish in the oven. Bake for 35 minutes.
  • When it’s completely baked, take it out from the oven and serve.

    Quiche is a savory, open-faced pastry crust dish with a filling of flavorful custard with cheese, meat and vegetables. The quiche is often considered as the savory comparable of the sweet custard tart.

    When you're done cooking your quiche, let it rest for 10 to 20 minutes. Then afterwards cut it into wedges to serve immediately. Or you can let the quiche cool to room temperature, cut into wedges, and serve.

    If you're not going to serve your quiche right away, you can place it in the refrigerator. When ready to eat, reheat for a few seconds in the microwave, or simply enjoy it chilled.

    For the fillings if you are going to make a Quiche Lorraine you can cook it with bacon and usually Swiss cheese. For a quiche that is Mexican Style cook with jack cheese, chilies, and salsa. For a quiche that is a Mediterranean Style cook with olives, artichokes, tomatoes, and/or feta or goat cheese. For Pizza Quiche prepare fillings with pepperoni and Italian cheeses.

    If you're monitoring your carbohydrates or you don’t feel like preparing or purchasing the crust, you can make quiche without the shell. You either wait for the egg custard filling to fully set and hold its own shape before cutting into wedges or bake the filling in individual ramekins.

    If you are a vegetarian, don't be depressed. You, too, can eat quiche. Depending on the recipe, you could make a mixture up one half cup to one and a half cups of tofu as the binding ingredient for the solid ingredients. Soy milk can also be used instead of cream, vegan cheese can be used as an alternative for dairy cheese, and the same vegetables can be added for flavor and texture.

    If you are planning to make mini quiche that you can serve for your part as casual finger food, you can do by using muffin tins for bite sized quiche.

    For standard sized muffin pans, cut dough into three and a half inch rounds and for mini muffin pans, cut dough into 2 and 3/4 inch rounds - either by using a cookie cutter or with a knife. Put the rounds into muffin wells and tuck so the dough fits nicely. Weigh down and pre-cook the dough for about 10 minutes and then fill each well to the top with the egg mixture and cook for about 12-15 minutes.
