Ingredients Needed

  1. Sugar (1.0 cup)
  2. Butter (0.25 cup)
  3. Eggs (2.0 egg)
  4. Milk (Whole Milk) (0.5 cup)
  5. White Flour (2.0 cup)
  6. Baking Powder (Low Sodium) (2.0 tsp)
  7. Salt (1.0 dash)
  8. Walnuts (0.5 cup, in shell, edible yield)
  9. Cranberries (2.0 cup whole)

  • Preheat oven to 350ºF.
  • In a medium-sized mixing bowl, combine one and ¼ cups sugar with ¼ cup of butter together until completely blended. It is always better to cut the butter in smaller pieces first before adding in sugar. Softened butter is a also a must when blending these two.
  • Add in the mixture one egg at a time, beating after each addition. Continue beating until desired consistency is reached. Beating eggs works best in a copper bowl. Also works best if you have room temperature egg whites and adding a little cream of tartar can even it out. Using a whisk can help the work get done faster, but you can use a fork as well.
  • Stir in together 2 cups of flour, 2 teaspoons baking powder and ¼ teaspoon salt in a separate medium mixing bowl.
  • Add this alternately with the milk to the butter mixture.
  • Add in nuts and cranberries to the mixing bowl. Nuts and cranberries are good combination of crunchy and tangy flavour that will make your muffins even more interesting to the taste.
  • Serve into 12 paper-lined muffin cups, and fill 3/4 full with batter. The amount of batter you put in a muffin cups depends on the amount of yeast, or in this recipe, baking powder you used. For most cases, 2/3 cups is recommended but with this recipe, ¾ full would be best.
  • Bake 25-30 minutes until golden brown. Makes 12 serving and is mostly enjoyed by many with hot coffee or tea on a rainy day.
