Instructions

This Nutrisystem Summer Pudding that is mainly composed of summer berries is just right for beginners since it is easier to prepare. This sumptuous pudding is the perfect way to finish a family meal.

  • In juicing the fruits, wash them first (leaving the strawberries behind) and gently dry on kitchen paper. In a large pan put sugar and 3 tbsp water and heat until sugar melts - stir a few times. Bring to a boil for about 1 min, and then pour in the fruit (except strawberries). Cook for 3 minutes over a low heat and stir for about 2-3 times. Afterwards, you will notice that the fruits will be surrounded by dark juices though still intact and softened. Put a strainer over a bowl and tip in the fruit and juice.
  • Put cling film on the 1.25-litre basin as this will help you to turn out the pudding. Lie on top two pieces in the middle of the bowl while letting the edges overhang by 15cm. Two pieces of cling film is ideal because it is easier than trying to get one sheet to stick to all of the curves.
  • Remove the crusts off the bread and cut 4 pieces of bread in half, a little on an angle, to give 2 lopsided rectangles per piece. Cut 2 slices into 4 triangles each and leave the final piece whole.
  • Wet the whole piece of bread into the juice by pushing it into the bottom of the basin for a few seconds just to cover it with juice. Then dunk the rectangular pieces one at a time and push in the basin's sides so that they fit together, alternately placing wide and narrow ends up. Add in the softened fruit, adding the strawberries here and there as you go.
  • Dip the bread triangles in juice and place on top. Bring cling film up and seal loosely. Put a side plate on top and weight down with cans. Chill for 6 hrs or overnight.
  • Open out cling film then flip over on a serving plate placed upside-down on top. Serve with leftover juice, topped with extra berries and cream.
