  7. Cilantro (Coriander) (5.0 g)
  8. Salt (1.0 dash)
  9. Black Pepper (1.0 dash)
  10. Pecan Nuts (45.0 g)

Instructions

This honey chilli sauce is a sweet and spicy sauce that can be used as a marinade, a sauce, or a dipping sauce. It’s great paired with chicken or salmon.

  • Prepare and measure the ingredients as indicated in the recipe above.
  • Use shallots for this recipe. They have a sweeter and richer flavor compared to white onions. However, if you can’t find them, it’s perfectly okay to use red or white onions instead.
  • Mince the shallots and finely chop the cilantro leaves.
  • As for the Pecans, toast them in the oven or an oven toaster and roughly chop them into bits. Toasting the pecans releases the oils of the nut bringing out the rich flavor from within.
  • For the honey, you may substitute it with Maple syrup from time to time. Maple syrup though has a very distinct flavor compared to honey which has a more natural taste and smell.
  • Take out a medium sauce pan and lightly coat the bottom with cooking spray or cooking oil. Remove excess oil by scooping them out or wiping them off with a kitchen paper.
  • Sauce the minced shallots in medium heat. Leave them for a minute to allow them to sweat and turn translucent.
  • Add the honey, sherry vinegar, Pasilla chilli powder, and cumin to the pan. Stir for a while to release the flavors of the spices.

  • Once boiling, reduce the heat to low and allow the mixture to simmer for 8 to 10 minutes.
  • At this point, taste the mixture and season it with salt and pepper as necessary. You can also adjust the sweetness and spiciness of the sauce by adding more honey and chilli powder to the dish.
  • Let the sauce reduce to half. Take it out of the heat and transfer to a blender or a food processor.
  • Blend the mixture at high speed to puree the mixture and make it smooth.
  • Add the chopped cilantro leaves at this point. Transfer the sauce into a ramekin or a sauce bowl and top with the chopped toasted pecans. Serve and enjoy with your favorite dish.
