Enjoy this smooth and creamy hummus. The secret? Removing chickpea’s skin can be the is the answer to a oh so smooth hummus.

  • To remove the chickpea skins: Place drained, canned chickpeas into a pot of boiling water. Boil water in a large pot, place the drained and canned chickpeas in the pot and let it boil for 2 minutes. Remove chickpeas from the heat, put in a strainer, and run cold water over the chickpeas to let them cool. When they have cooled and safe to touch using your hands, take each chickpea easily peel off the skin. Using your thumb and index finger pops out the skin really well.
  • Get a red bell pepper, wash, remove the seeds and slice them in quarters.
  • Heat the oven to 400 degrees. Line a baking sheet with aluminum foil. Place the peppers on the pan, turning them occasionally, until all sides are blistered and slightly blackened. When peppers have been broiled to perfection, slice them and let them cool in the refrigerator.
  • Prepare the avocado, slice into cubes so it will be easy to process in the blender/food processor.
  • Place the chickpeas, ripe avocado, garlic, lemon juice, salt and black pepper in a blender or food processor. Blend until smooth consistency is achieved. Transfer the mixture in an airtight container.
  • Hummus stored in an airtight container, can be refrigerated for up to 3 days and can be kept in the freezer for up to one month. Add a little olive oil if it appears to be too dry.
  • Hummus can be used as a spread, dip for sliced vegetables, chips, and chicken treats. It can also be used as a salad dressing.

    Things to keep in mind when choosing a ripe avocado: color has to be dark green to black, feel the avocado by pressing it lightly with your thumb, there should feel some give. Do not push too hard or the avocado might get bruised. If you can’t find a ripe avocado, go ahead and buy the unripe one. You can make an unripe avocado ripen faster by placing it in a paper bag.

    The Guinness World Record for the largest dish of hummus created was in Lebanon in May 2010. The winning dish was cooked by 300 cooks from al-Fanar, a village near Beirut. It weighs approximately 10,450kg which doubled the previous record which was only cooked by 50 Israeli Arabs and Jews at 4,100kg in January 2010. Local media sources say the hummus recipe included 8 massive tons of boiled chick peas, 2 tons of tahini oil, 2 tons of lemon juice and 70kg of olive oil.
