P90x Protein Pancake recipe

Ingredients Needed

  1. Egg White (1.0 large)
  2. Oats (0.67 cup)
  3. Whey Protein Concentrate (0.25 cup)
  4. Low Fat Cottage Cheese (0.25 cup)
  5. Vanilla Extract (2.0 tsp)
  6. Oat Bran (0.25 cup)
  7. Skim Milk (0.66 cup)
  8. Applesauce Unsweetened (0.83 cup)


These fluffy, tad healthy pancakes are very easy to prepare even your kids can get involved. Your breakfast would be as fun as ever.

  • Crack an egg, separate egg yolks from egg white. Transfer egg whites to a separate bowl. Repeat the process until the amount called for in the recipe is reached.
  • Measure and combine the oats, protein powder, wheat germ, in a medium bowl. Proceed with measuring the wet ingredients namely the egg whites applesauce and skim milk, cottage cheese and place them in separate bowls.
  • In a blender, pour the egg whites, cottage cheese, vanilla extract, and cinnamon into the blender and mix them until everything is well combined. Add the measured oats, protein powder, and wheat germ, into the mixture and then blend again just until everything is well mixed. Add the applesauce and skim milk. Process all the ingredients in the blender until a thin batter is formed.
  • Heat a large nonstick frying pan over medium heat and coat it with a little non-stick spray. Pour 1/4 to 1/3 cup batter per pancake onto the pan. Cook the pancake for about 2 minutes or until it bubbles start to appear on the surface. Flip pancake and cook the other side for about 2 minutes or until golden brown. Repeat the procedure until all the batter is consumed.
  • To serve, stack three pancakes on top of each other. Top with your favorite fruit. You can add chopped apples, bananas, kiwis, blueberries or any fruit in season.
  • You can also get your kids to eat fruits with the pancakes. Serve them decorated ones, like making a faces with a pancake and fruits. You can slice kiwis and oranges. Place the kiwis on the top portion of the pancake, that will make as the eyes, the orange slices can go a few inches below the eyes and will act as the mouth. Squeeze strawberry yogurt above the eyes to make it as the hair of the pancake. I’m sure your kids will be more than happy to eat their fun and healthy breakfast.

    Wheat germ goes rotten easily because it contains unsaturated fat content. Raw wheat germ rots more quickly than the other wheat germs. Fresh wheat germ should smell something like browned nuts, not moldy. An unopened and sealed jar of wheat germ is usable and can be kept the shelves or cupboards up to a year. Remember to store opened wheat germ in the fridge in a firmly sealed dish, where it can still be usable up to nine months. Write the date on the container to keep track of the stored wheat germ.

    Unable to determine when egg whites need to be in soft or stiff peaks form when called for in a recipe? Here’s how to distinguish one from the other: You’ve reached soft-peak stage when the mixture mounts but has no shape. A medium-peak stage is when the mixture is thicker, and stands but still bends. You’ve reached stiff -peak stage when the mixture stands and you can turn the bowl upside-down without the mixture falling out. When the mixture breaks down and gets very dry and frothy, you have over whipped your egg whites.
