  4. Roasted Red Pepper Hommus (2.0 tbsp)
  5. Celery - Raw (1.0 cup chopped)
  6. Plum Tomatoes (chopped) (0.5 cup)
  7. Tomato Paste (2.0 tbsp)
  8. Light & Fat Free Chicken Broth (1.0 cup)
  9. Thyme (Dried) (1.0 tbsp leaves)
  10. White Pepper (1.0 tsp)
  11. Ground Cumin (0.25 tsp)
  12. Salt (1.0 dash)

Instructions

  • Prepare a large, heavy soup pot and heat wine in a over medium heat.
  • Add onion, red peppers, and celery. Cook and stir for 3 minutes.
  • Stir in garlic. Cook for 2 more minutes, adding more wine if necessary.
  • Combine tomatoes, tomato paste, and broth. Cover and bring to a boil.
  • Reduce heat and simmer for 25 minutes.
  • Strain soup in a food processor or blender. Bring back to the pan, add seasoning, and heat through.
  • Serve hot.
