Weight Watchers Barley With Mushrooms And Onions recipe

Ingredients Needed

  1. Unsalted Butter Stick (0.67 tbsp)
  2. Onions - Raw (1.0 cup of chopped)
  3. Brown Mushrooms (Crimini Italian) (250.0 g)
  4. Organic Low Sodium Vegetable Broth (3.0 cup)
  5. Barley (1.0 cup, dry, yields)
  6. Salt (1.0 dash)


This is a great side dish to replace either potatoes or rice. The sweet and creamy flavor of the mushrooms is well complimented by the lovely smell and flavor of the onions. It’s like the dry version of a mushroom-barley soup.

  • Prepare and measure all the ingredients as listed in the recipe above.
  • Mince the onions. The recipe calls for using Spanish onions. If you do not have them in stock, you may use regular white or red onions. If you want a more intense flavor, you can substitute this with shallots.
  • Shred or finely chop the Cremini mushrooms. These mushrooms are also known as Baby Bella. You can use a box grater or a food processor to do this or you can simply roughly chop them with a knife as well.
  • As for the broth, you can use either vegetable broth or mushroom broth. Using mushroom broth will result to a more flavorful dish. I personally like to use mushroom broth instead of just plain vegetable broth.
  • Take out a medium sauce pan and lightly coat this with cooking oil. You may use cooking spray as well. Remove excess oil by wiping it out with a clean kitchen towel.
  • Add the minced onions to the pan and let the onions sweat to release their flavor. This will take about 3 to 5 minutes. Continuously stir the onions to prevent it from burning. Make sure your heat is in either low to medium strength.
  • Once the onions have softened and turned translucent, add the shredded mushrooms. Let the mushrooms cook and allow them to release their moisture.
  • Continuously stir for another 5 minutes.
  • At this point, add the barley, broth, and salt to the pan. Set your heat to high and bring the mixture to a boil.
  • Once it is boiling, lower the heat to low and and let your dish simmer until your barley is tender. This will take about 60 to 75 minutes.
  • Don’t forget to stir the mixture occasionally to prevent your barley from sticking to the sides of the pan and burning.
  • Once all the mushroom broth has been absorbed and your barley is already tender, remove your pan from the heat and transfer your parley into a serving bowl.
  • Season with salt to taste.
  • Enjoy this dish while it is still warm. It’s a great side dish that will compliment any fish, seafood, or meat dish. You can substitute this for your rice, bread, or potatoes.
