Ingredients Needed

  1. Light Butter (Stick with Salt) (15.0 g)
  2. Onions - Raw (1.0 cup of chopped)
  3. Garlic (3.0 clove)
  4. Spinach - Raw (1.25 cup)
  5. Sliced Water Chestnuts (1.0 can)
  6. Canned Artichoke Hearts (1.5 cup)
  7. 1/3 Less Fat Cream Cheese (8.0 oz)
  8. Reduced Fat Sour Cream (8.0 oz)
  9. Low Fat Cheddar Cheese (8.0 oz)
  10. Pepper or Hot Sauce (1.0 tsp)
  11. Salt (1.0 dash)
  12. Black Pepper (1.0 dash)
  13. Roasted Red Pepper (1.5 cup)

Instructions

This is a spicy and cheesy dip that goes well with your favorite chips and crackers. It’s made from spinach and artichoke hearts making it extra healthy. It’s the perfect dip to serve for large gatherings and parties.

  • Prepare and measure all the ingredients as indicated in the recipe above.
  • For this recipe, we will need to use the oven. Preheat your oven to 350 degrees F while you prepare the ingredients. Prepare an 11 x 7 inch baking dish as well.
  • Mince your onions and cloves of garlic.
  • Roughly chop your spinach, the water chestnuts, and artichoke hearts.
  • If you want your dip to be really smooth, you may use a blender or food processor to finely chop the ingredients. Personally I prefer them a little rough so there’s a bit of crunch and texture in every bite. It is also good to see what you are eating.
  • Measure your cream cheese and sour cream. Shred the cheddar cheese. Instead of cheddar cheese, you may also use parmesan cheese.
  • If you want to trim the calories, you may substitute the butter, sour cream, and cream cheese with fat free varieties.
  • If you’re not on a diet, you may use the regular varieties as well for the ultimate creamy experience. After all, you will be sharing this dip with a large group and you would probably just eat a few bites of it.
  • In a non-stick frying pan, melt the butter over medium heat. Saute the minced onions and garlic for a couple of minutes to allow them to soften and release their flavors.
  • Add the chopped spinach, the water chestnuts, and the artichoke hearts. Continue sautéing for another couple of minutes.
  • Lastly add the low fat cream cheese, sour cream, and half a cup of the shredded Cheddar cheese. Stir the mixture until the cheese is melted.
  • Add hot sauce, salt, and pepper to taste. Adjust the seasoning according to your taste preference.
  • Remove from heat and transfer your dip into the baking dish. Level your dip with the back of a spoon or an offset spatula.
  • Top the dish with the remaining shredded Cheddar Cheese. If you want your dip to have a little stretchy texture, add a few Mozzarella cheese as well.
  • Pop your dip into the preheated oven for 18 to 20 minutes or until the cheese on top is thoroughly melted.
  • Take out from the oven and let cool for a bit before serving. This dip may be enjoyed warm or at room temperature.
  • Serve with baked tortilla chips or your favorite chips, flat breads, crostinis, and crackers.
