Ingredients Needed

  1. Artichokes - Raw (globe or french) (4.0 medium)

  6. Lemon Juice (2.0 lemon yields)
  7. Bread Crumbs (1.0 cup)
  8. Thyme (100.0 g)
  9. Chives (4.0 tbsp of chopped)

  11. Fat Free Chicken Broth (2.0 cup)
  12. Salt (1.0 dash)
  13. Black Pepper (1.0 dash)


The combination of garlic and herbs gives this stuffed artichoke recipe a savory and aromatic flavor that makes your mouth water. The dish looks elegant upon plating and your diners will for surely want to try it right away.

  • Wash the artichoke and cut off the tips of the leaves that are sharp and pointy. Discard the tough outer layer of leaves and shave off the leaves from the base.
  • Cut off about an inch from the top of the leaves and about an inch from the bottom of the base of the artichoke as well.
  • Rub a lemon to prevent the artichoke from turning brown. You can also soak the artichoke in cold water with some lemon slices while preparing the rest of the ingredients. This also prevents it from oxidizing.
  • In a large pot, place your artichokes and cover them with water 3/4 of the way. Pour a little salt and a few lemon slices in your port as well.
  • Bring the water to a boil on high heat and then quickly reduce the heat to low to allow your artichokes to simmer for 30 to 40 minutes.

  • When the artichokes are soft enough, using a melon baller, a spoon, or the tip of a knife, remove the hairy choke at the center and discard the choke.

  • Saute your onions and garlic for a couple of minutes to release their flavors.
  • Add the finely chopped thyme, chives, herbs, lemon juice, bread crumbs, and ½ cup of the chicken stock to the pan. Cook until all of the chicken broth is reduced and absorbed by the bread crumbs. This is your stuffing.
  • Season your stuffing with salt and pepper to taste. Adjust seasoning according to your preference.
  • Stuff your cooked artichokes in the middle with the stuffing. Include some stuffing in between leaves. Handle the artichoke delicately.
  • Place the artichokes in a baking dish and pour the remaining chicken broth over it. Cover the baking dish and bake it in the oven for another 20-30 minutes.
  • When done, remove from the oven and serve the dish while it is still warm. For better presentation, cut the artichoke in half and place them on a serving dish.
