Buying eggs during medifast

    So, every single time I buy eggs from my local "cheaper" grocery store, and I attempt to make hardboiled eggs, the % of eggs that actually peel cleanly (without taking part of the egg with it) is quite low. I mean....It is such a pain! We're talking like 9 out of 10 eggs are difficult to peel..

    When I buy THE SAME type of eggs from the nicer grocery store, and I cook them the exact same, I can usually peel most of them easily. 1 out of 10 is difficult to peel..

    Is this an indicator of the egg quality? I"m so confused! If an egg is being uncooperative during the peeling process, does that mean it's "bad"? Should I toss it??.

    My hardboiled egg procedure (usually about 8 at a time):.

    - Eggs in cold water. throw in a little bit of salt. Bring eggs to a boil..

    - Bring down flame to simmer eggs for about 18-20 minutes..

    - Drain hot water in sink, replace with cold water, including ice cubes for about 5 minutes..

    - Peel..

    This has usually worked for me, but eggs from a particular store always manage to annoy me. thoughts?.

    Very fresh eggs are harder to peel. Maybe the ones at the bigger grocery store are older, so they peel easier. I only boil them for 10 minutes, then put them in a bowl under cold running water (no ice) in the sink until they've cooled off, pat dry and put in a covered container, and then put them in the refrigerator..

    Of the time, they peel fine. If I forget to buy eggs a week or so ahead of time, sometimes they're too fresh, and I have the same problem with the shells sticking to the egg. It is SO frustrating. It has something to do with air under the shell when they aren't so fresh.too lazy to google it and get the actual facts right now..

    Anyway, older eggs peel better than fresher ones. Duh. I could have just said that..

    I have chickens... and yes, the fresh eggs are MUCH harder to peel. Egg shells are gas permeable and as they hang around more "air" gets in. You can make them easier to peel by putting them in ice water after you cook them (the cold makes the inner egg contract away from the shell). But that won't work if the eggs are super fresh....

    Well this throws my whole world into disarray, having found out that my assumptions are completely wrong! lol..

    Well....I must say I prefer old eggs, because peeling them is so darn easy!.

    Interesting. I didn't know that..

    A while back I bought some eggs that supposedly were guaranteed to be salmonella free. I forget the exact brand. These egg whites would not beat into stiff peaks to make revolution rolls..

    The eggs are pasteurized with heat, and the whites take waaaaay longer to beat into stiff peaks. Much trickier, I think, because if you beat them.

    Too.

    Long they go all watery. You have to beat them longer, but not too long.you have to stop at just the right moment..

    Sounds like you over boiling them..

    I bring mine to a boil then shut the heat off and let them stand for 8 minutes in the pot... rinse them with cold water and they peal easy...

    I notice when I forget them on that is when they are hard to peel.

    Hey all,.

    I'm a newbie, so forgive me, but I thought egg whites were the main thing on the Medifast plan? Are regular eggs allowed on the Medifast plan, even as a lean? I'm trying to plan for an out of town trip and that would be great if I could use hard boiled eggs for one meal....

    I have also heard of putting baking soda or vinegar in with the water "can" help with easier peeling.....

    HI Gamatz! You can incorporate whole eggs as your main Lean portion. If you go to the "Meatless Options" schdule you will find you can either do:.

    - 14 egg whites, or.

    - 2 eggs & 4 egg whites, or.

    - 3 eggs only - but only do this once a week..
