Having Alfredo for Lean and Green

    Tonight....

    I'm having "Mahi Mahi Squasta Alfredo".

    ... to use up the rest of my spaghetti squash..

    Yesterday I said I was having that but opted to use Salmon Burgers instead of the Mahi Mahi because I forgot to thaw out the Mahi Mahi at lunchtime, oops..

    Well, the Mahi Mahi Pieces (I buy frozen from Trader Joe's at a little over a pound per bag - so it will be a few meals in the days to come as well) are now in the refrigerator, thawed and ready to cook.

    SCRUMDIDDLYUMPTIOUS!.

    What are y'alls plans for today?.

    I don't know yet I have lots of leftovers - like mock fried rice, grilled chicken, pork - so probably leftovers - but I gotta tell ya - last night I was cookin!.

    I had a pork tenderloin and made for the first time ever - MASHED Cauli!!! Where is that SneakySteph? Girl no wonder you like it! I steamed the cauli, sauteed some garlic, then put it in a blender with Tbsp cream cheese and splash of milk......it was HEAVEN!.

    But yeah tonight I have no clue - something easy maybe - unless I decide to cook. lol Then I'll just have more leftovers. Been craving some Steelhead but haven't seen it in stores lately......

    I'll tell you about last night because the "plan" is for my husband to cook tonight. LOL. I think I finally got my tofu & broccoli stirfry down to a science. It was the best batch yet - Marinated tofu, panfried until browned & moderately crispy, with with fresh broccoli florets stirrred in at the end to keep them crisp. Just a touch of stir fry sauce, since the tofu was marinated for several hours. Yum, and lots of it..

    Tonight, it's buffalo chicken or tuna because I am going to use up the celery before it gets soft. I've been wasting so much produce lately.

    I need more of those fancy green bags. I've had tomatoes in the fridge in one of those bags for WEEKS and they're still good!.

    Steamed broccoli and 2 Chicken Burgers from BJ's (nice - low sodium, 4.5 g fat and 21 g protien in each burger) with 1 tsbp lite ranch dressing. It was yummy..
