Idea for Medifast Fritatta?

    I don't like eggs, but thought I might be able to learn to like a fritattta if it is filled with veggies (no mushrooms, bleh) and protein, less egg taste. Anyone have any ideas?.

    Try this.... I came up with this several years ago and am still enjoying it.

    Now I’ve never been an egg type person or a breakfast person for that matter, but for some reason, I’ve been craving eggs like crazy (only thing I’ve really craved while on MF). And for someone who really never ate eggs, this is really surprising to me. Anyway, I decided to do a take on an old “family” favorite for dinner……Chicken Broccoli Frittata..

    3oz cooked chicken breast (cubed).

    1 tsp EVOO or marinade for chicken breast.

    1 whole egg.

    2 egg whites.

    1-1/2 cups Frozen Broccoli Florets.

    1 tsp Mrs. Dash Southwest Chipotle seasoning (I’m a spicy gal).

    1 tsp Dried Chives.

    1/2 tsp Dehydrated Onions.

    Pinch of Low Fat Parmesan Cheese.

    Preheat the oven to 350 degrees.

    Precook the chicken breast (either by grilling, sauting, or method preferred) and cube into small bite size pieces. Set aside.

    Next, put the Frozen Broccoli Florets in a microwave safe container and cover with plastic wrap to form a seal. Pop in the microwave for 2-4 minutes to steam or until soft. Cut the broccoli into small bite size pieces..

    In another bowl, combine the whole egg, the egg whites, Mrs Dash Southwest Chipotle, Dried Chives and Dehydrated onions. Whisk well..

    Now combine the broccoli and cubed chicken then pour the egg mixture in and gently mix thoroughly..

    In an oven safe container sprayed with Cooking Spray, pour in the mixture and top with Parmesan Cheese..

    Bake for approximately 25 minutes until lightly browned or desired doneness has been reached..

    Remove Frittata (in one piece) to serve. It is gorgeous on the plate and tastes even better!.

    And to change it up a bit......

    I reduced the broccoli down a tad and mixed in a few tbsps of fresh green bell pepper, a dash of McCormick Rotisserie Chicken seasoning and a dash of dried Oregeno - OH my goodness it was delicious! The flavors were unbelievable and the dish is filling but light...perfect end to a day.

    Maybe try egg whites too? I don't like the yolk part ever but egg whites don't taste very strong to me..

    There are lots of options to play with a fritatta - here's what I do. Enjoy!.

    Frittata, with Spinach, Green Bean, and Feta.

    (makes 1 lean, 3 green, 2.08 condiments, 1.5 healthy fats).

    1c egg beaters (1/2 lean).

    1.5 oz President fat free feta (1/4 lean).

    1.5 oz diced boneless skinless chicken breast (1/4 lean).

    1 cup chopped frozen spinach (2 green).

    1/2 cup French cut green beans (1 green).

    1 tbsp chipotle Tabasco (1/3 condiment).

    1/8 tsp chipotle Mrs. Dash (1/2 condiment).

    1/8 tsp onion powder (1/4 condiment).

    1/8 tsp garlic powder (1/2 condiment).

    1.5 tsp olive oil or canola oil.

    Cooking spray (up to 1 condiment).

    Mix all ingredients, except oil and cooking spray. Coat nonstick pan with the oil, and heat pan and oil on medium heat. Add the mixture, spreading it evenly in the pan. Cover and cook until the egg beaters are set, and the bottom of the frittata is golden brown. Slide out onto a plate, and spray the pan with cooking spray for 5 seconds. Carefully invert the plate over the pan, putting the frittata back into the pan. Recover, and cook until the other side is golden brown..

    (Note: Generally, it is wise to avoid fat free cheeses, as most of them add additional carbs to restore some of the flavor they lose from taking out the fat - however, this particular brand was given the ok when I asked Nutrition Support about it).
