Alright.. this is the laziest meal ever. I make it when I have the house to myself for the weekend since it makes 2 full L&Gs. You have been warned..
I brown the ground meat and it comes out to about 11 ounces. Since it's 96% lean, this makes just under 2 servings..
I cook some bell peppers in a pan (3 servings)..
Put the meat back into the pan..
I throw in a can of Rotel (3 servings)..
Season with mexican/taco seasoning of some sort..
Top with cheese to fulfill the requirements for the rest of your lean (about 1/2 ounce with this particular brand of ground beef)..
For your healthy fat, use avacado or laughing cow (the 'chipotle' kind is fantastic with this!)..
Orrrr... cut the bell peppers out, serve over 1.5 servings of lettuce (3 cups total, but 1.5 cups if you're serving only one) instead, and top with ranch dressing of your choice. Throw 1/2 a bag of chili nacho puffs on top to serve as croutons..
I use ground turkey breast regularly...but I do a number of things with it. Stuffed portabella mushrooms with browned another veggie such as spinach and some Parmesan or lc cheese. I put balsamic in the mushrooms before stuffing.
I also brown it with asparagus and spices when I'm looking for something fast..
I will also do meatloaf with mushrooms and crushed tomatoes. No bread crumbs. Sometimes I'll add a little Parmesan..
Tonight's meal (for two, as my wife who's not on Medifast is mimicking it pretty closely):.
Protein Burgers.
1 lb of ground beef.
About 4 white mushrooms chopped up finely.
A very small handful of low-fat shredded cheese.
About a tablespoon of garlic powder.
Mix the above ingredients in a bowl well. Shape the resulting product into two identical patties and grill on the BBQ outside (yeah, a saute pan would work well, too)..
Take 1 large leaf of Romaine lettuce for each patty and fold in half lengthwise to make your folded-over "bun." Spread the bottom with a little low-fat mayo and a little catsup, place a slice or two of tomato and a couple of dill pickle chips on the bottom half of the "bun." Place the cooked burgers on that and fold the top of the bun over the burger. Pair it with a side salad with low-fat dressing..
Boom! Dinner. Yum! Who needs bread? We really haven't been missing bread, and I'd even go out on a limb to say I'd go to In-N-Out and order up a burger this way, too!!!.
I just made this today for L&G tonight but I used someone's suggestion and sliced some zucchini and squash on my mandolin and blanched them to use as "noodles". Hopefully it's good..
