Ideas for Lean and Green Meals

    Help,.

    Been having some pretty good lean and green meals but definately need some new ideas..

    We have been sticking to plain meat and salad or vegetables. Stir fry a couple of times, does anyone have any new ideas??.

    Whenever I'm looking for new ideas, I go to one of the online cooking/recipe websites and browse the low calorie or low carb recipies and then modify them to meet the Medifast requirements. Many times the titles are really descriptive - Thai beef with zucchini...etc. Many have a search feature where you can put in what you've got in the fridge already..

    I made the cauliflower 'breadsticks' last nightI just googled to find the recipe on a blog I constantly use for recipes! They were easy to make, VERY tasty, and filling too! Yum..

    Cauliflower shell pizzas with vegan pepperoni & mushrooms..

    Broiled tilapia cooked with a little lite ranch on it, with roasted cauliflower (spritzed with a little olive oil)..

    Southwestern egg beaters (about 1 cup) mixed with turkey sausage crumbles (about 2/3rds of a cup), along with sauteed portabella mushrooms on the side tossed in a garlic salt..

    Do a search on here for the Buffalo Chicken bake...OmG it's heaven..

    And then there's tons of Carrie's recipes (above) neatly arranged!.

    I made two batches of that stuff this weekend.

    And you can FREEZE them and have them on the go....i did and I'm having it three times this week LOL.....

    My Favorite is.

    My adjusted Cheddar and Mushroom burger.



    .. YES A BURGER!!! Ran it by a Medifast Health Coach, and is a total legit Medifast Meal:.

    1 Bison Burger patty by High Plains Bison (Found at gourmet grocery stores).

    1 slice Cheddar Almond Cheese (Found in Vegan Section, I take it to the cheese section and ask them to slice it up, since it's a spongy cheese, it's much easier if they cut it in their fancy machines instead of me struggle at home).

    Portabello Mushrooms.

    Heinz no sugar added Ketchup.

    Regular Mustard.

    Tomatoe (Sliced, you'll only use 2 slices).

    Dill Pickle (I get the sandwish sliced ones, and I used 2 slices).

    Iceberg Lettuce (I slice it in half and then separate to use the lettuce instead of the bread on the burger similar to protein burger at in n out).

    Cook the burger, melt the cheese on top, and dry sautee the mushrooms..

    On the iceberg lettuce, I put ketchup, mustard, tomatoes and pickles, then I put the patty/cheese on top, then the mushrooms, then I put more iceberg lettuce on top to close it off as a burger. SO YUMMY!!!!!.

    I have some spinach on the side..

    I'm not sure how this adds up. I've never heard of Cheddar Almond Cheese. How is that counted?.

    The Cheddar Almond Cheese is made by Lisanatti. Because it's high in protein (7g), low in carbs (1 net g - 2g carbs, 1g fiber), and low in fat (3g) my health coach counted it as a lean. Bison is in the very lean category, so we are allowed 7oz. The High plains patties are 6oz, so the almond cheese accounts for the extra 1oz to add up to 7oz..

    This makes 1 lean, and the veggies on the burger are very minimal, so I have raw spinach to complete my green with them as a salad. I have never been very rigid with counting the greens, I never overdo it, but I've never counted the green, so I'm not sure how we count the green. If you can help with that that would be great..

    The almond cheese is great!!! It comes in Cheddar, Mozarella and Jalapeno Jack..
