Lean and Green Cauliflower Mac N Cheese Recipe

    Got this recipe farom my coach and have seen it online a few other places. Tried it tonite and it was dynamite. I added a bit more 1/2 1/2 to the cheese as it was melting and also a few drops more in the baking dish before it went in to the oven. The cheese seemed otherwise gluey. Also it baked alot longer than 20 minutes til it was brown, but that was no biggie, and definitely worth the wait. My favorite cauliflower meal for sure- tho it was a bit of a drag having my whole l/g together- usually I split it up during the day, but my day worked out well to do it....

    Servings: 1.

    Per Serving:.

    1 Lean Protein.

    3 Vegetable Servings.

    3 Condiments.


    1 cups cauliflower, steamed and chopped.

    Cup moderate-fat shredded cheddar.

    Cup moderate-fat shredded Colby jack.

    2 tablespoons half & half.

    1 tablespoon reduced-fat cream cheese.

    Teaspoon black pepper.

    Teaspoon onion powder.


    Preheat oven to 350 F. In a saucepan over medium-low heat, warm half & half and cream cheese. Add black pepper and onion powder. Wisk until melted and creamy, but do not let boil; keep warm. Mix cheese together in mixing bowl. Pour of the cheese mixture into the saucepan.

    Add cauliflower and gently fold until cauliflower is covered. Place mixture in a baking dish and top with remaining shredded cheese. Bake for 20 minutes or until cheese is browned..

    I made real Mac and cheese for my family a couple of nights ago, and was just thinking that it would be great to have a Medifast version. I will be trying this this weekend. Sounds yummy!.

    That sounds wonderful. I am definitely going to try it. I have a slightly different recipe that I like a lot too:.


    1 1/2 cups cauliflower.

    1/4 cup egg beaters.

    1/2 cup cottage cheese.

    3/4 cup shredded mozz cheese.

    1 tsp garlic powder.

    1 TBS Italian Seasoning.

    Chop the cauliflower into bite size pieces. Mix together the rest of the ingredients. Top with a sprinkle of parm cheese..

    Bake at 350 for 30-40 minutes or until egg mixture is set..

    Counts as one LG meal..

    Thanks Sunset and Aviva for sharing! I have been craving this type of flavor (real craving is Mac & Cheese but trying not to go there). Eager to give both of these a try!.

    I love Mac 'n Cheese and this really satisfies that craving. I try not to make it too often because then I'll want it every day. <smile>.

    I made this recipe a week or so ago (found it on Sandy's blog), and, in the middle of it, found out that my DH had eaten all the reduced-fat cream cheese. Because I couldn't turn back at that point, I had to punt..

    I ended up using two wedges of Laughing Cow, one plain Swiss and the other mozzarella, sun-dried tomato, and basil. I thought it might make it taste weird, but it actually worked out well..

    So if you don't have cream cheese and/or don't want to buy a big tub just for this, LC is an option!.

    I was telling this recipe to my daughter who is away at school, and realized she wouldnt have cream cheese around and wondered if there was a readily available substitute or if just melting the cheese with cream or milk would work out..

    You guys! IM SO EXCITED TO TRY THIS!! Anyone know a good reduced fat brand for cheddar? I cannot find one anywhere. I tired making cheese sauce once for the shirataki noodles but it was a fail..

    Also, does anyone know how many sun dried tomatoes count as what?.

    Kraft makes some 2% shredded cheeses (mozzarella, cheddar, etc.) that I've used for various recipes with great success! I get them at our local Wal-Mart. Hope this helps!.

    I couldn't find any reduced fat cheese at my little town grocery store, or at King Soopers. But I did find the Mozzarella, cheddar and colby jack at Wal-mart..

    I tried Sunset's recipe last night....very good! The only thing I'm going to change is to put in a smaller amount of Italian Seasoning...it was a bit much for me...but that's just my personal taste because it's a great recipe..
