Making Lean and Green Cheesy Mexican Rice

    I just got this recipe approved by Nutrition Support (thank you!) and I wanted to share it with everyone. I made a similar one the other night but I accidentally shorted myself on my "lean". Oh, well! Live and learn..

    Cheesy Mexican "Rice".

    1 cup cauliflower or 180 g of cooked from frozen.

    1/2 cup Rotel tomatoes with liquid (less than 5 g of carbohydrates per 1/2 cup).

    1/4 cup water.

    4 oz. 2% mozzarella cheese (3-6 g of fat per ounce).

    1 tsp. garlic powder.

    2 tsp of sour cream.

    Preheat oven to 375 degrees.

    Spray saut pan with olive oil spray over medium-high heat. Add tomatoes with liquid, water, cauliflower, and garlic, mix, and cover. Let simmer for 5-10 minutes (really, I just eyeball it) until cauliflower is tender. Transfer cauliflower mixture to baking dish and top with cheese. Bake in oven for 10 minutes or until cheese is melted and brown on top. Serve with a dollop of lowfat sour cream. Yummy!.

    This provides 1 Lean, 3 Greens, and 3 Condiment Choices.

    I made this last night and it was fantastic. I halved the amt of cheese and ate half of a meat serving with it....next time will use velveeta..

    This sounds delish! I would probably cut back on cheese and have a little chicken with it or in it.
