Medifast Recipe for Thai Peanut Chicken Pizza

    I made this yesterday since someone asked me on my blog a few weeks ago if I could come up with a pizza similar to the one at California Kitchen. Well, this isn't as delicious as the ones they serve there but it is still surprisingly good! I used PB2 and Walden Farms Sesame Ginger Dressing since their peanut sauce has a combo of sesame and ginger in it. It worked out great and it only used one condiment. I did marinate the chicken breast overnight in Newman's Own Low Fat Sesame Ginger Dressing because I think that serves as a better marinade than WF. You could always use 1 tsp teriyaki sauce and 1 tsp soy sauce to marinate the chicken. I plan on making the peanut sauce, chicken and veggies again and make it as a wrap in some lettuce leaves.     Veggies, Chicken. Mozzarella and Peanut Sauce.

    Thai Chicken "Pizza".

    Ingredients:.

    For the Crust.

    1 cup raw Cauliflower, grated or 100 grams (2 Greens).

    1/4 cup Egg Beaters (1/8 Lean).

    1/2 cup Fat Free Mozzarella Cheese, shredded (1/3 Lean).

    Peanut Sauce.

    2 tbsp PB2 or powdered peanut butter (1 Snack).

    2 tbsp Walden Farms Sesame Ginger Dressing (1 Condiment).

    Toppings.

    2 tsp Newman's Own Low Fat Sesame Ginger Dressing (1.67 Condiments).

    5 oz raw Chicken to yield 2.25 oz Chicken (9/24 Lean).

    1/4 cup Fat Free Mozzarella Cheese (1/6 Lean).

    1/4 cup or 26 grams Bean Sprouts (1/2 Green).

    2 tbsp Red Pepper or 18.6 grams, thinly sliced (1/4 Green).

    2 tbsp Green Onions or 12.5 grams, thinly sliced (1/4 Green).

    2 tbsp Cilantro, chopped (.12 Condiments).

    Directions:.

    Marinate raw chicken in 2 tsp Newman's Own Low Fat Sesame Ginger Dressing overnight. Grill or cook chicken until done. Chop into small pieces. Make sure you are getting 2.25 oz cooked chicken. Set aside..

    Preheat oven to 425 degrees. Place parchment paper on a cookie sheet and spray lightly with cooking spray. Combine grated cauliflower, egg beaters, and 1/2 cup cheese until mixed completely. Spoon mixture on prepared pan with parchment paper. Use the back of a spoon to thin out the mixture and form a circle about the size of a dinner plate without the rim. Bake for 25 to 30 minutes.

    Bake for an additional 10 to 15 minutes..

    Combine PB2 and Walden Farms Sesame Ginger Dressing. Add the chicken and stir until blended. Spread the chicken mixture over the top of cooked pizza crust. Top with veggies. Sprinkle 1/4 cup cheese over the top. Broil until cheese is melted about 5 minutes..

    1 Complete Lean and Green Meal with 3 Condiments and 1 Snack (You still need 1 healthy fat for the day because fat free cheese is classified in the same group as chicken which requires 1 healthy fat).

    Sandy, this sounds completely divine! I might try a version of that on Monday we have Hackbraten leftovers tonight and tomorrow, a pork loin roast on Sunday, and can't wait for a change on Monday. Yummers!!!!!!.

    I had a pizza party the other night at my house with your cauliflower pizza recipes with other MFers and Low-carb family... OBVIOUSLY- ONE OF THE BEST PIZZAS WEVE EVER EATEN.
