Mini crustless quiches for Medifast

    I am trying something new tonight... mini crustless quiches made with spinach, mushrooms, shredded Swiss and Egg Beaters. I found some 3 cup sized Pyrex baking dishes that are the perfect size!.

    They were really good and really filling! Hard to eat it all!.

    LEAN.

    1 cup Eggbeaters (1/2 serving of "lean" from leanest category).

    3 oz low-fat cheese (1/2 serving of "lean" from the leaner category).

    Leanest gets 2 healthy fats, leaner gets one healthy fat, so you need 1 1/2 healthy fat. I mixed in 1 1/2 tsp trans fat-free margarine for my healthy fat..

    You can hold back 1 oz of the cheese to sprinkle on top, if desired..

    GREEN.

    1 cup chopped fresh spinach.

    3/4 cup chopped fresh white mushrooms.

    1/4 cup other veggie (scallions, peppers, whatever).

    I baked it in 3-cup Pyrex mini casserole dishes at 350, but I'm not sure how long. I'd start with 30 minutes and then just watch it and see. Put a little foil on top so it doesn't get too brown on top, then remove it for the last few minutes. It comes to about 400 calories as prepared above, or omit the cheese and use 2 cups Eggbeaters to bring it down to 375 calories..

    I'm a little confused. Why is it in 4 containers? The recipe is for 1 Lean and Green Meal, right? Did you add any seasoning? What kind of cheese did you use? I apologize for all the questions. This looks wonderful and I want to make it and enjoy it!.

    I made four, one for each of us in my family. The recipe is for one person. I used low-fat Swiss, but you could use any low-fat cheese. I used a few grinds from my pepper/garlic grinder..
