Recipe for Medifast Mashed Cauliflower?

    Hey all! I am really interested in trying some mashed cauliflower to replace mashed potatoes. Does anyone have a great recipe? And, how much am I allowed to eat for my LG?.

    Cauliflower Mashed "Potatoes".

    From The Medifast Recipe Forum.

    Ingredients:.

    1 1/2 cup cooked cauliflower (3 Greens).

    2 Light Laughing Cow Cheese Wedges (1 Healthy Fat).

    1/2 tsp Molly Mc Butter - optional(1/2 Condiment).

    1/16 tsp (half of 1/8 tsp) Salt (1/4 Condiment).

    1/8 tsp pepper (1/4 Condiment).

    Directions:.

    Combine all ingredients in a bowl and use a hand mixer and mix until creamy. You can also use a food processor for this..

    All your greens and 1 Condiment and 1 Healthy Fat.

    I just steam cauliflower florets in the microwave (usually use the Ziploc Steam Bags) and then whip them with a stick blender. I think the recipe sounds delicious but if you want to save on condiments, you can eat it plain after mashing (delicious in my book!) or add a small amount of garlic..

    I just steam them and throw them in a food processor with 2 wedges of light laughing cow..

    270 grams is a full serving of all three greens. (cooked, frozen cauliflower).

    The 2 wedges of light laughing cow = one healthy fat.

    Thanks for the recipe. I have been wondering how to do this, now I know. Plus I love the Light Laughing Cow cheeses. I could also see using a NF cheese and have that be part of your lean serving (non-meat) if you wanted a flavor that Laughing Cow did not have..
